Picking red ripe Down to Earth Dota Tarrazu coffee beans.
In the Down to Earth Estate, our workers apply their skills to only pick the red ripe Dota Tarrazu beans. This is done mainly to guarantee amazing taste but also to keep the caffeine level low: a red ripe bean contains 50% less caffeine than 4 weeks earlier when it is green.
Here you see Andrea, the wife of Miguel, our caretaker. See how skillful she is at picking the ripe beans around the coffee bean that is not quite ripe.
To pick this wonderful beans when they are not completely ripe will hurt the taste, giving coffee a bitter aftertaste. Green beans sell for a lot less money in the market and are commonly used as low cost fillers.
