@Yankeeprepper Some young punks were stealing beets out of Mikhail Timofeyevich Kalashnikov 's garden back in 1948. It had to stop. He decided that he needed a mission specific weapon for the task...The rest is history.

We use those same peppers for an italian style stuffed pepper. We core them and fill the cavity with ham and mozarella. They are traditionally packed in oil but we pack ours in a similar brine and store them in the fridge . They never last long enough to preserve.

I have never canned so forgive me.
Why don't you need to stir the seasoning on the bottom?
Why don't you remove the seeds from the peppers? Do the become soft over time?

@TheBlueEyeDevil The seasoning seeps into the contents of everything in the jar. The seeds do soften and I like to eat them.
