Are kitchen blowtorches any use, or just a crappy substitute for the real thing? We pit cook's blowtorch against plumber's blowtorch against ... hairdryer.

  • I've seen sushi chefs use those large blowtorches to sear their raw fish. It's quite a spectacular sight.

  • the plumbers blow torch is better for meat and heston say if you use the kitchen one you will start cooking the meat in the middle before the outside is nicely done.
