This is a delicate cousin to Red Velvet. Honey, go fetch Mama's parasol. I found this recipe in Spool magazine. Got the magazine free in a little shop called The Stitchin Post in Nashville. Awesome folks working there. They handed us this magazine and the rest is history. I made these for Jason's birthday. http://www.youtube.com/user/coolikedatazian

Dry Ingredients
2-1/2 c. flour, sifted
1-1/2 c. sugar
1 tsp. baking soda
1 tsp. cream of tartar
1 tsp. powdered cocoa (I used 2 tsp)
1 tsp. salt

Wet Ingredients
1 c. buttermilk or substitute*
2 large eggs
1-1/2 c. vegetable oil (WAY TOO MUCH, in my humble opinion, ditch at least 1/2 a cup!!)
1 tsp. red food coloring
1 tsp. white vinegar
1 tsp. vanilla
1 tsp. almond extract

Frosting
1 stick butter (1/2 cup)
8 oz. cream cheese
1 tsp. vanilla extract
2-3 c. powdered sugar
1-2 drops red food coloring
Optional: pink sugar crystals

*Buttermilk substitute: put 1 Tbsp. of white vinegar or lemon juice in a glass measuring cup. Add milk up to the 1-cup line. Let rest for 5 minutes. You may rest, too.

Before making cupcakes, take one 8 oz. pkg. cream cheese and one stick of unsalted butter out of refrigerator; set aside to soften. Preheat oven to 350 degrees. Line 24 cupcake holes with paper liners.

Put dry ingredients into medium bowl. Whisk lightly to combine. In bowl of stand mixer, dump wet ingredients and mix well. Add dry ingredients; mix on low for a minute or two, until blended. Spoon batter into cupcake liners, filling half way. Bake for 15-17 minutes. Do not over bake!!

While cupcakes cool (they must cool completely!), beat softened butter and cream cheese until blended, then slowly add 2 c. powdered sugar, 1 tsp. vanilla; mix well, maybe adding more sugar to taste. One drop of red food coloring is all this icing needs; okay, two. Frost cooled cupcakes.

  • I think the cupcake liners were for the jumbo sized cupcake tins (sorry if someone already mentioned this but I don't have time to read all comment today, lol)

  • @CookingAndCrafting I have a great idea. It's is freezing @#$% cold here. How's about you come to here to northern Canada and I go there to Hawaii? You'll be happy, I'll be happy, lol lmao. Our trees are pretty much bare and the cold wind's a-blowin'. I wouldn't doubt if we have snow by Hallowe'en and I have to bunbdle the boys up and half cover their costumes (that always sucks.) :)
