I was looking for a root vegetable recipe for Thanksgiving. I tried this one and it was a home run! My husband, the health fanatic, loved the flavor of the rosemary and thyme with the olive oil. The vegetables taste wonderful roasted this way and added an even more savory flavor to our Thanksgiving meal. I will be looking for more recipes from Laurie and Vicks.

To make the peeling easier, I would cut the squash again (in quarters rather than in half).
