All those saying he used his bare hands, thats how the chicken is coated. I'm sure he has washed his hands and knows the basic concepts of hygiene being a chef.

He might be saying Onion Paste. Of course it makes sense because you must have an onion paste to go with your ginger, garlic, and chili past. Now...What about the spice in the tray that he mistakenly calls Garam Masala after he already added the Garam Masala

Hey! I guess it's practically impossible to say. I think Garam Masala is just a non specific mix of various spices anyhow. It even says his 'secret' garam masala earlier, unfortunately. He doesn't put much of it in, whatever it is, anyhow. I've tried this recipe exactly and it's very good if you use a barbecue!
