Well, yes and no - Balinese dances like the Baris have a general structure that should be followed. However, it is improvised on its realization - dancers have the liberty of lengthening or shortening any section of their dance. At the same time, they may be criticized for leaving out/extending a section that might be considered crucial to the dance by various audience members.
Other dances such as the Legong have through-composed choreography and should show no improvisation whatsoever.
AAAGH! I hate the way YouTube always gets the audio out of sync with the video. That make a very big difference for a dance performance, especially Balinese dance which is very precise.

i'm not sure the audio is out of sync i think it's just a matter of the players and the dancer improvising off one another, right?
