How do you make the perfect burger? Food writer Josh Ozersky shows you how to get it right, from the meat to the buns and everything in between. The result? The perfect smoke-grilled hamburger that's pink in the middle, crusty on the outside and 100% delicious.

  • When I worked as a short order cook we pressed the burgers on the grill to speed up cooking. When I make them at home, I take more time and keep the flavorful juices inside the burgers -- no pressing. I also us a special burger mop sauce that is a real crowd pleaser.

  • if the burger is pretty thick press a hole in the middle about the size of your thumb. sounds wierd but it cooks terrificaly
