This simple and tasty recipe uses only three ingredients and the whole cauliflower. The pesto itself is made from the leaves of the cauliflower. I used a purple cauliflower because they are sweet and nutty but any one will do.

**RECIPE

- 1 Cauliflower
- Pine nuts (about 1/8 cup)
- Extra virgin olive oil
- Garlic powder (optional)
- Sea salt (optional)

    It is used just to clean the cauliflower. The vinegar will help clean those nooks and crannies.

    Was the vinegar used to clean the cauliflower, like to draw out the impurities? Or was it to get some tangy flavour into the it before baking? I've always wondered what the best way is to wash vegetables so just wondering if this is the method that should be used. Thanks!

    glad you used the purple cauliflower! I used it once and everyone thought I got a mutation. It happened to be on sale and lucky me, it was cheaper than the white variety. Will have to try this one day, and good idea using the whole vegetable!
