You gotta love a guy who's basically taking a bunch of ingredients that cost almost nothing, mixes them up using his skills, and when he's done the product goes for what...9 bucks? 11? 12? Could even be 16-20, if he's working in Manhattan or a major metro area in an upscale place. High-end places make a 400-500% profit on booze. Helps cover the paper-thin profit margin on food.
You make almost nothing on food. In the restaurant business, the food is just there so you drink more.

:) If you're into rums try Diplomatico Reserva Exclusiva, a really smooth, warm and heavy rum from Venezuela, not really well known but worth every cent. It has great notes of dried fruits, allspice, pineapple, cinnamon, leather, tobacco and nut, just awesome!
My favorite bartender, flawless as always!
