@uniqbrother I want to add my two cents in that if you do add less spice, you need to eat it sooner because the peppers are one of the things that preserve it.

Are regular chives and garlic chives the same? I am unfamiliar with chives in general.

Garlic chives are a little different from regular chives you see in the American grocery store.. try to find it in a Korean or Asian grocery store. thanks

Well.. I'm not accustomed eating raw zucchini... so I don't think it will taste good to make kimchi using a zucchini for this recipe. sorry..
