These are all Republicans from the staffs of Bush Jr. or Jeb Bush. Why didn't the AP have any Democrats comment on the truthfulness of the movie?

What happened was that Bush SUED to stop the votes from being counted and Bush LOST in the Florida Supreme Court. He took it to the U.S. Supreme Court and the U.S. Supreme Court decided to halt the count before all the votes had been counted.

Why sue to HALT a recount that was almost done?

No, the panel is not completely biased, they are completely honest, and unlike the movie, moderate. Happy, no, it is hardly a biased response to that biased movie. It is the real people with their take on how it reflects on what they saw happening during that time.

I can say this about the movie, totally biased in favor of Gore, it does not present the Bush side in the least. It paints the Gore side as the victim (typical), and the Bush side as the bad guys. I'm sure YOU like it, I don't.
