ELIN's GIapatta line is a fully automatic process. The machine is able to process dough with up to 70% water content!!! The dough comes in from the feeder's teflon hopper. It is then worked out to the desirable thickness and cut to the desirable width. Finally, the automatic guillotine cuts the product in the chosen length and lais it down into the special trays.
