What is the ingredient that causes it to go bad so quickly? I've been keeping uncanned chickpeas in the fridge and they never go bad that quickly.

Indeed. And that a huge amount of the Israeli population are full or half Arab from the Arab Jews who have lived in what is now Israel (or the surrounding nations like Syria, Iraq, Jordan and Yemen) for centuries, is lost on them too. Or are the previous commenters trying to suggest that Arabs are only Muslim?
Whatever the case, Hummus is wonderful :)
