Finally decided to cook the grass fed beef heart we got when we purchased a side of beef from a local farm (Hollins Farm, in Virginia). Used a popular Peruvian street food recipe, they call it Anticuchos. It was delicious and tasted nothing of organ meat as I expected it might. Some bits were a little tough, but I think I might have made those pieces too small. Would make it again easily.
