@luisfranciscanora You are right, and even if by some reason some of the still liquid N2 were to touch your skin, it'll only feel as though you have very very mild frostbite and fade away quickly. The only way you'd get frostbite is if you were to put your entire hand inside the container LOL. As for goggles, as a safety precaution they should be on but the chance of liquid N2 getting to your eyes is very very small as it evaporates so fast.

i cook with liquid nitrogen everyday and it is amazing. Not only can you change the complete physics of food, but it is a tool also. For example, your plates for a function dessert arent cold enough, just pour liquid nitrogen on them and they cool down and the nitrogen boils off...And if you work in a high end restaurant, if your ice cream starts to melt, pour nitrogen into it and whisk it and its back to its frozen state...even handier if your using a paco jet...
momentary contact with liquid nitrogen is actually not dangerous as long as your skin is warm enough... and how do you know he's not wearing goggles?

Your hand is so much hotter than the liquid that it will start vaporizing before it even touches you. There will be a layer of gas inbetween your hand and the liquid. In fact, wearing a glove can put you in more danger, as the surface won't be quite as hot. Nitrogen boils at -195.79 C, your hand is soooo much hotter.
