Debbie Teoh demonstrates how to make a flaky dough mooncake with salted egg filling and century egg centre.
Salted egg custard: 20g cornflour 20g custard powder 70g caster sugar 1/2 tsp salt 60ml thick coconut milk 150ml evaporated milk 5 salted egg yolks 8 century egg yolks.
Water dough: 100g shortening 1 Tbs icing sugar 200g plain flour 75ml water
Oil dough: 80g shortening 150g plain flour 1/8 tsp salt

i'm all across in the caribbean and i've never heard of century egg nor salted egg yolks... after googling it, i realised that it is time consuming to make at home. can i substitute the salted egg yolks for regular egg yolks????

Mooncake with salted egg is norm, but I have never heard of using century egg as filling. Wonder what it tastes like..........

century egg is a kind of preserved egg. a century egg yolk means yolk of century egg. :) i realy want to know how to make century eggs because it's expensive to buy here. Anyway, you can buy them from chinese shops.
