There’s a lot of bad information on YouTube so you certainly want to do as you suggest and see if it passes the common sense test. It seems that many in our society have an attention span slightly longer than the average chipmunk and don’t take the time to check facts. BTW, I found a really good article on storing dry foods in #10 cans for 30+ years that was verified by scientists at BYU. Food stored properly will last a long time.

@snarky75 I knew I had to unsubscribe when he showed all the books in his home library and talked about how well-read they were, how smart his wife and children are, etc. It was just more than I could take. I've always known, that the smartest folks never have to brag about it. Also, in my experience, the smartest folks I know do a lot more listening than talking.

@katzcradul Now that is interesting. I want to learn how to can and make pickles this spring so I been watching a lot of your videos. I figure I would start out with making some strawberry jam in June and progress to pickles.

Great information!! Thank you for putting this video up for us. Quick question - should I re can the store bought pineapple and other fruits you've mentioned? If so, can you suggest a canning or water bath time for like pineapple?

But... I wouldn't trust ANYTHING a college course says..they are the perpetrators of the lies..people have been eating thousands of cans of fruit for decades..they better fear their mates and getting in a car becuase the chance of getting hurt via those are thousands of times higher!

This is no different than the egg scared. Article I read yesterday said "66 affected" IN ALL OF THE UK? 66 AFFECTED by raw eggs? Really? 1 in 20,000 eggs MAY be a problem..& they push the fear on raw eggs..the govt loves to spread fear...

I grew up on food my Mom canned and we never worried about dates. We just made sure the seal was intact. I never got sick once off that food, not once.My first time being sick from food was at Waffle House when I was 27 yrs. old. A lot of people talk a lot about things they know nothing about. They take one tidbit of info and create fear and chaos with their ignorance.

First of all let me say that I LOVE your videos and more importantly I really like the way you think...with that said, I agree whole heartedly that if foods are properly canned/packaged they should be good to eat for ages. I think a lot of people see that 'use by' date and just start tossing out perfectly good food--I will concede that the nutritional value starts deteriorating, but that's a far cry from deadly. Common sense...people sure need to stock up on that too! :)

Well,I don't know who this dude is,but I can tell you from experience from generations of canning our own fruits and meats,and dinners,etc that they last for yrs.This guy probably wasn't even here when we did the green pears back yonder.

my sister used to also do green beans by water bath.. but I guess that is the way many did back in the day..Very informative video.

Sane and sensible way to deal with canning practices.
I have experienced the problem you mentioned with both the mandarin oranges and pineapple - I was storing in a cupboard in the kitchen and I believe that heat and moisture played a definite role in the degradation of the cans (I will admit that I WAS worried about your Hubby when you were telling the story of your friend's jars *smile*)
I subscribed btw - very usable and UN-hysterical advice to be had here.

Okay, now get my self in trouble here. Back home, and in my own garden. If I can Its only for a winter are maybe 2 years of storage.. If its something like my peppers that I only grow ever 3+ years I dry it. Vac seal it. Good for years to come.. I do perfer to dry it for long term storage, including fruits. soups. ect.

Great info katz! I watched his video, and was just floored at the lack of common sense. How many people eat canned fruit past it's exp date everyday? And yet, we never hear of anyone getting botulism. I went to the CDC website; the stats were a little different that you mentioned, but the end numbers worked out the same. Heck, listening to this guy, people should be dropping dead every day! You've always presented the info in accord to USDA standards & encourage safe food practices! Thx!
I looked it up. There are fewer than 27 cases of botulism in the US per year. 27/330000000 are pretty good odds.

@ArizonaAdventures Not exactly sure what your asking, but in general, I love fermented foods like pickles, sauerkraut, and cultured foods as well.

@katzcradul Did you know pickles and sauerkraut are actually a digestive enzyme and good for your pancreas. Yeah. My hubs has had pancreas problems in the past, acute pancreatitis and pancreas divisum. Other digestive enzymes include the core of pineapples and papaya.
