how come you don't slice or crack the olives so that the salt brine can get into the olives, and hasten the curing process?

Lovely, wonderful, always wondered how to do this. The egg is so Korean, great way to measure salt in water.
Of course, a pan of water is the simplest way to tell if eggs are fresh and how fresh.

yes! preferably sea salt... altho the iodized variety will work just as well - but yr better off chomping down on some good seaweed rather than relying on yr table salt for yr iodine intake...
