if i was in the usa, ide take my landrover to him and tell him to set it up, nobody knows anything about this stuff anymore, its a dying art and in years to come people like this will make a fortune as these carbs aint just gunu disapear!
is it meant to make a ' clunking ' noise? before i cleaned my carby, it went up and slowly came down not making a ' clunk ' but was more like it was under pressure, now that i have clean it, it makes the ' clunk '...so is it meant to?

That's an understatement ;)
I had to use a jet centering tool to get the rear HS2 carb centered. No amount of slow adjusting using the needle was working for me. The little tool saved my sanity.
You will never get the jet and needle truly concentric that way. Buy or make a jet centering tool and get it right.

hi john, when u turned out the bottom nut twelve times as an initial setting, what is that for? the choke? and how do u set it for the final time?
