First in the new Coloured Scribbles series 'Cooking in Colour'. In this episode I am showing you how to make a chocolate cake.

Ingredients:

Cake Mix :-
200g Butter/ Margarine
200g Caster Sugar
200g Self Raising Flour
2 Large Eggs
2tbsp Cocoa Powder (or tsp. Vanilla Extract)

Icing and Butter Cream:-

Icing Sugar
Butter
Cocoa Powder (For Chocolate icing)

Recipe:

Preheat the oven to 160 degrees Celsius.
Mix 200g of Butter with 200g of Caster Sugar until the batter is smooth. Then add in 200g of Self Raising Flour and 2 Large Eggs, mix well and try not to curdle. Also try to beat as much air into the mixture as you can to make the sponge light and fluffy. Then add 2 tbsp of Cocoa Powder, stir well to ensure that the chocolate flavouring is spread evenly throughout the batter.

Rub butter into 2 cake tins. I then add a tiny amount of flour to coat the butter as my tins have lost their non- stick coating. You don't have to do this. Evenly put distribute the chocolate batter into the two tins and spread out ensuring that the mix is level. Place in the oven for 20minutes. When you take the cakes out of the oven, insert a metal skewer on the end of a fork into the middle of the cake and retract, if there is gooey residue, place the cakes back in the oven for a further 5 minutes. (Repeat until your skewer comes out clean). Take the cakes out of the tins and leave on a cooling rack until they are no longer warm.

Mix together butter, icing sugar and coca powder to make you butter cream, there are no exact measurements to this so keep tasting the cream until you are happy. Then spread onto one of the cakes with a knife in an outwards circular motion to avoiding tearing the cake. Place the other cake on top. Then mix a large amount of icing sugar with water. Add the water 1 tbsp or tsp at a time as it is easy to add too much. Then added cocoa powder or a tiny amount of food dye to flavour or colour the icing. Spread over the top of the cake in the same way as the butter cream and then decorate as you wish.
