Here is the recipe... I have to thank CHEF MICHAEL SMITH (My idol) from the Food Network for the inspiration.... I hope you don't mind that I changed it up a little!
Makes 30 - 36 cookies
INGREDIENTS:
1 cup butter (I used margarine)
1-1/2 cups white sugar
2 eggs
1 tbsp each vanilla and corn syrup (I used maple syrup)
3 cups flour
1 tsp each baking soda and baking powder
1/4 tsp salt
FOR COATING:
1/4 cup white sugar
2 tbsp cinnamon
(I used 2 crushed up crunchie chocolate bars)
METHOD:
1. Preheat oven to 375F
2. In a large mixing bowl, whip the butter and sugar until well combined. Next add the eggs, one at a time until combined. Add the vanilla and corn syrup.
3. In a separate bowl, sift together flour, baking soda, baking powder and salt. Add in thirds into the wet ingredients. Blending well with each addition.
4. Roll a tsp of dough in hands and then coat in cinnamon sugar mixture (The crunchie bars are better!).
5. Place two inches apart (They spread!) onto greased cookie sheet (I use parchment paper liner) and bake for 12 minutes until golden brown. Any further & they will be tough.
Cool completely & store in cookie jar or air tight container. ENJOY!!
Very nicely done. Busy Mom in the kitchen with kids coming and going doesn't lose her cool. Just continues right on making the snickerdoodles.
