One of the prominent culinary shifts today is going back to wholesome American cuisine and Mac and Cheese is known as one of the most familiar American dishes. At Gold St. restaurant Chef Patrick Vaccariello truly embraces this trend and even takes it one step further. His secret ingredient for a superb Mac and Cheese is truffle oil. He also adds brie and cream to make the "cheese" and tops with breadcrumbs to make the dish a bit crunchy. Anyway, whether you prepare it at home or come to dine at Gold St., Chef recommends eating this decadent dish in moderation.

  • if you add truffle oil in at the beginning, the heat will break down the flavours too much. it should only be added towards the end of cooking. any chef will tell you that.
