From the province of Maharashtra in India comes this phenomenal Carrot Salad. A combination of carrots, green chilies and peanuts, tempered with hot ghee, mustard seeds and curry leaves. The perfect accompaniment to Indian food

    There is a similar south Indian version called Kosumalli...an interesting variation of the same.

  • @chayanbanerji Thanks for the heads up. I checked out the recipe for Kosumalli. It's sounds interesting. Apparently it's also known as Koshumbari... which is evident where the name Koshimbir came from.

    I liked the recipe idea and I have to work on making it. Thanks again.

    Amazing, I went to the supermarket here today and for the first time they had fresh curry leaves. Must be a sign for me to try out this dish.

    Geez, you've got me thinking also of pine nuts or almonds or chick-peas + cabbage etc. but I guess - as with my past history in cooking - that too many ingredients (or spices) will screw food up in a big way.

  • @philbx1 Curry Leaves in a grocery store? Awesome!!! That opens up a whole new range of flavors. I love using curry leaves in my food and will be featuring a lot of dishes with curry leaves in the near future.

    Curry leaves spoil easily in the fridge. The best way to prolong it's life is to strip the leaves of the stem, wrap it in a moist paper towel, put it in a zip loc bag and freeze it. You will get a lot of mileage from your leaves this way. You can use them frozen in your dishes.

  • not too many dishes have carrots as their main event. This recipe is surely precious.

  • @kentpaul65102 Thank you. This salad is really amazing. It's flavor is unique and even though in India, it's had as a side, you really could have this as a main. I am sure you will love this.

    There is another salad, very similar, that's made with cucumber and cumin seeds. I think I'll be showing that next.
