By definition an Expresso must be produced with at least 13-15 bar of pressure, the Bialetti or other Mocha makers only produce 1-2 Bar of pressure so it is difficult to get the Crema on top. The coffee still tast better than the drip coffee. I also leave the lid open to prevent water vapor to condensate and fall in the coffee.

Hey! i do exactly the same , but there is not that special cream on top of the cafe! why is that? i only get just black stuff. somebody told me it is because i heat it very fast. by the way , i don't have a kitchen with fire , just ordinary one.

@onecrazymofo1 the brikka has a special valve that makes that kind of foam. the coffee didn't BOIL or BURN. the noise comes from the valve, same thing for the bubbles, it is the way it's supposed to work.
