Thank u so much for this recipe. This was the best cake I've ever tasted. It turned out perfect!!! Please keep it up with the cupcakes as I'm a real fan of those. Next stop.. Your Orange cupcakes ;)
Ps. If I want to add nutmeg to the carrot cupcake how many tsp.? Also the outer part of the walnut inside the cupcake turned black, it didn't taste of burned nuts but how can I avoid that from happening?

@asomy89 Thanks for the kind words! Nutmeg would be a great addition. It's a strong spice, so I would use anywhere from a pinch up to 1/4 t. Walnuts will change color when they are baking because of the chemical reactions going on around them. It doesn't change the flavor and they aren't burnt. It's just what they do :)

The recipe was really good! I loved the taste! :) Can you please put a video on how to make red velvet cupcakes w/ cream cheese frosting that actually taste really good. I tried a lot of recipes and they were all nasty. Please put up a video on delicious red velvet cupcakes w/ cream cheese frosting! :)

@wcusd1 So glad you like the Carrot Cupcakes! Love the lemon in the cream cheese frosting :) I keep looking for a better way to make Red Velvet Cupcakes because I just won't put a bottle of red dye into a cake. Beets are definitely out, so it may be a while before I make a video on that one. Sorry! -Cindy

Hi Cindy! Im going to make this recipe because I love cupcakes and the way you explain it, step by step, is fabulous! Just have a question: if I decide to freeze my cupcakes, what would be an option to defrost them? Im not sure if I have to bake them, since they will have the cream cheese frosting! Hugs from El Salvador!

@adepunk77 Once I've made the cupcakes and frosted them, I put them on a tray and into the freezer overnight. Then the next day I wrap each one in plastic wrap and put them into a freezer bag, back into the freezer. (They can last 3 months!) When you want to eat a cupcake, take it out of the freezer, unwrap the plastic and let it sit on the counter for 20-30 minutes. The frosting will help keep the cake moist as it defrosts. -Cindy (P.S.
