My children nag me all the time to make fish and chips and because I come from Blackpool I am a bit scared to make it because they have only eaten stuff from Senior's in my hometown which constantly wins "Chip Shop of the known Universe" awards.
We live in Stuttgart so Chippies are few and far between if not down right non existent. I will take the plunge I think on the basis of this recipe.
It sounds and looks so simple and your calming manner soothes my nerves.

Fizzy beer or Guinness would be very nice. I do have a fish in Guinness batter and it is one of my favourites :)

That idea with the fizzy water is genius :O Gonna have to get a cheapy deep fat fryer and try this!
I suppose you could also use beer :P Beer battered cod! Get some! :D

The fizzy water makes the batter nice as it creates bubbles and make the batter nice and light.
You are quite right, you can use beer instead of water.
I also have another video on youtube that uses Guinness. The Guinness gives it a lovely flavour :)
