Roast pork is one of my favourite dishes. This easy recipe takes the standard roast pork a step further by brining it and removing the rind and treating it so it stays nice and dry and gives delicious, crispy crackling. It's very quick and easy to make. Give it a go!

Ingredients:

1.8kg loin pork roast with bones in
Salt
Olive oil

Brine:
2 litres water
2 litres apple juice
8 tbs salt
2 tsp pepper
1 chopped onion
Handful fresh sage and thyme, lightly bruised in mortar and pestle

Hassleback Potatoes:
Peeled potatoes
100g softened butter
3-4 cloves garlic
Pinch salt

  • @stylemesweet Yep as mentioned below it's a temperature probe for a wireless meat thermometer :)

  • @PlatypusGuitar Thanks buddy, it's just to keep the moisture out of it, moisture is the biggest killer of crackling, and you can't have roast pork without crackling :)

  • Just some notes on the new format from someone who's been secretly watching for a while...

    Short intro works much better. Intros generally just piss people off. Fade the fire crackling sound effect to about 30% when you start speaking.

    Move the little info/ad bar down to be about 30-50px from the bottom of the video. Being just a little bit below the middle is jarring. Also reconsider the gradient you're using as well as the font.

    I like the subtle use of cam audio in the background.
