which icing do you use that is that stiff?

Even the smooth side of a paper towel isn't "smeewth". You get paper fibers in your frosting, and the paper towel will actually draw moisture out of the frosting, drying it out.

Does anyone know what that big thick icing tip is called she was using the ice the sides of the cake? I have never seen one before. Reply direct my email as its likely I might never see if posted generally. I rarely revisit.

you do it like you weave a basket :D
the pink lines are your guides start after the pink line go over the next line stop at the one after it then start on the otherside and repeat :) hope that helped :D

Smoothing the icing with a paper towel is a good idea but you might want to let people know that the buttercream will need to have merangue powder in it so the cake develope a slight crusting to stop the paper towel from sticking.
