I like Escobar as a player. He's a very, very good pass catching Tight End. But he definitely struggles in the run game. It's tough to watch. As far as the play you mentioned, the defender took himself out of the play. He has some work to do.

A two Tight End formation(12 Personnel) is a relatively easy way to help your Offensive Line in pass protection. The Cowboys, over the last few years, really seems to value the Tight End position. I'm not sure what an additional Tight End has to do with an Offense's tempo though.
