Anything with mushrooms is a winner for me .. I love them! :)

Anything mushrooms & you have my attention.
One tip though(& I use them often) is cook them the same way you did but ad a extra flip. The natural juices build up in the vents while cooking & that'll drain & reduce alot of moisture.
That'll allow the sauce of you're choice to dry into the veggie.
It's pretty much a standard for any cap.
I love mushrooms, keep the recipies coming!!!

@rockubabe Yeah we still have pork belly bacon like you're accustomed to, but we usually have the loin attached to it still for 'full rasher' bacon. What I've got here is the loin only without the belly part. It's lower fat and referred to in Australia as "short cut bacon". Are you still in Melbourne?
