It's a non-newtonian fluid, meaning it acts contrary to how Newton would tell us it would (i.e. it's reactions are not equal and opposite). When this liquid is hit, either by physical force or a sound wave, it turns solid rather than splattering about like a regular liquid would. So that's what's happening here, when the sound waves hit the cornstarch unequally it turns into an irregular solid.
