  • I know absinthe is supposed to have wormwood in it (insert beverage industry marketing copy here) but frankly, most absinthe tastes like high proof pastis to me, or, more historically, pastis tastes like low proof absinthe. I use either so long as no strange green dyes are involved.

  • Absolutely. Since the amount being used is so small (I just use a teaspoon, which is 5ml) the flavor of the drink shouldn't be affected greatly by the substitution.

  • Would it be OK to use Pernod or some other kind of pastis instead absinthe?
