Tried this for Thanksgiving. Found that the optional step was, for me at least, best left out.
My other variation was to replace the cup milk with ½ cup cream and ½ cup coconut milk. Also I stirred in ½ cup (more if you like) sweetened shredded coconut. It was amazing. Highly recommend it.
