Cajun Style Fried Turkey

One 10-15 pound turkey
3 to 5 gallons peanut oil (depending on the size of your turkey), or other oil with a high smoking point
4 ounces of your own favorite liquid seasoning or marinade for injection (there is no standard for this ... everybody does his or her own, as it turns out. You can buy some ready made from the Cajun Injector folks.) I used italian dressing with some oregano, salt, pepper, cayenne pepper, onion powder, for injection and the same minus the dressing for the rub before I fried the bird. MAKE SURE THE TURKEY IS DRY BEFORE FRYING!!!!!!!
