Certified Raw Chef Caroline Carter and daughter Shenita Ray prepare Mexican dishes with "raw" ingredients. Today's menu includes: Taco "meat" made with walnuts; traditional salsa and guacamole; and, non-dairy sour cream made with raw cashews. At State Fair Park, the ladies are visited at the Tommy Thompson Center, where cameras catch them in action preparing their popular line of Flaxseed Crackers.
