RECIPE -- Donsuemor Traditional Madeleine Parfait with Strawberry Puree and Strawberry Cream ------


Layer this delicious parfait in martini glasses to show off the beautiful layers the parfait.

Serves 8

2 ½ cups Strawberries

½ cup superfine sugar

2 tbsp fresh lemon juice

1 cup whipping Cream

1 tablespoon sugar

1 cup strawberries, coarsely chopped

24 Donsuemor Traditional Madeleines

4 Donsuemor Lemon Madeleines, Coarsely Chopped, about ½ cup

Fresh Mint

Place the strawberries, sugar and lemon juice in a blender and puree until smooth. Press the mixture through a

fine mesh strainer to remove the seeds. Can be made up to five days ahead

Lightly whip the cream with sugar in a mixer fitted with the beater attachment until soft peaks form. With a

rubber scraper, fold in the chopped strawberries.

To Serve-

Place a dollop of the cream on the bottom of 8 martini glasses, parfait glasses or bowls. Drizzle with the

strawberry sauce and then top with a Madeleine. Repeat the layers finishing with the cream and the sauce.

Sprinkle with the crumbled lemon Madeleines, garnish with a mint leave and serve.
