A delicious recipe for Vegetable Biryani, elevated to the next level by using a bounty of vegetables like Sweet Potato, Patty pan squash, golden beets and celery root. Also the vegetables are roasted for an intense flavor profile. This is a California twist on the usual vegetable biryani.

  • This looks GREAT and nutritious. When I get around to trying this one,... I think it would taste great with Grilled Eggplant and green beans

  • @gorikuri I agree. Eggplant however, tends to get mushy and disintergrate. You should use baby eggplant, score them into quarters, living the tip intact. This way, they hold their shape. Let me know if you have any questions on this.

  • @TheSugarplum770 I got most of these at the local supermarket. Did you try Whole Foods? They have quite the selection.

    It also might be because it's winter, and a lot of these vegetable might be out of season.

  • Where do I look for these vegetables, chef? I looked for 'em at a supermarket here in Austin but could not find anything but parsnips. Please help. Thanks.
