1.5 cups English cucumber, grated
2 cups nonfat plain Greek yogurt
1/2 cup finely diced tomato
Paprika
Salt
Pepper

Strain grated cucumber to reduce water content

Add tomato and cucumber to yogurt and mix well. Season with paprika, salt and pepper to taste.

    I am an 11 year old girl, my name is Laney. I LOVE to watch all of your cooking channels. My brother and I are good little chef's who cook lunch everyday. The first recipe I saw was your guacamole recipe. It looked delicious enough to try so thats what I did. I made your guacamole with your baked tortia chips. It's AMAZING!!!! My family and I are vegetarians. I wanted to ask you if you could make a low fat mac and cheese.

I'm happy you liked the guacamole and I'm quite impressed that you also made the tortilla chips. I am going to try this week to figure out how to make a lower fat mac and cheese.   • @bakingchin Yes, I think the red onion will work great, just don't add too much because I think it could overpower the cucumber. One thing you might try is caramelizing the onion before you add it. I've done this many times and I really love it that way.
