Only a small amount of old starter is required to activate the new one. Dom's starter is quite stiff and is left for 24 hours at room temperature.

Dom's starter contains:
Water
Rye
Wheat

  • Well, although this will work, it's much more dependable to carefully measure the water, flour, *and* the old starter. I also prefer to mix in a food processor since it does a great job of fully mixing a small quantity of dough (and we don't care too much about precise amount of dough development) + it incorporates more oxygen.
