@raceplate just put your chocolate candy bars in the microwave for like 10 second burst for like 2 to 3 times and it's easy the first time I tried it worked greAt

I'm trying to make chocolate decorations for cupcakes. I bought milk chocolate candy bars is that ok? And how do I melt it without burning the chocolate?

@Tyler4768 yes and the angle you hold the spatula to will help.
bigger the angle tigther the curl - small the angle bigger the curl.

So I am guessing from what I saw... The faster you move the tighter the curl? Then vice-versa for when you slow down?

@jieshika The chocolate was probably either too thick or too cold. Don't let the chocolate cool all the way; it still has to be a bit malleable. Also, use a very thin, metal spatula. Thicker plastic ones will never work. Don't worry if you don't get it the first few times. I made chocolate crumbs the first two. Keep trying!

how come it doesn't curl it just goes up the spatula when i do it?

A lot easier than other methods!
this was simply semi sweet chocolate- but I have used bitter sweet- its just fussier

when the chocolate sets up it will dull down and not be so shiny, as well as you begin to push with the spatula it will roll instead of just crinkle up- it is a little bit of trial and error

the tray is a flat baking sheet, the scraper is simply a metal spatula turned over! no special equipment just easy peasy..........You can even use semi sweet chocolate chips if you like- even less cumbersome than bittersweet

The chocolate was simply semi sweet chocolate chips, melts easy, less likely to burn and works wonderfully in this application. I simply poured the melted chocolate onto a flat baking sheet, thinned it out using an offset spatula and let it cool.Then scored it and then used a metal spatula to make the curls.

You're welcome! I am not classically trained as a pastry chef, but when I was making curls for an article, my editor who was present was amazed at how easy I did them, she'd taken a chocolate course and lamented how hard they made it (with special tools etc) so I filmed it right then and here it is. I'll keep doing that sort of thing it seems to be a crowd pleaser
