Known nearly as well for his rock 'n' roll bearing and philanthropic efforts as for his work in the kitchen at Vesta Dipping Grill and Steuben's Food Service, Selby's usually on the leading edge of local restaurant trends, especially those that involve clever tweaks to classic recipes. Aside from all that, though, the Denver native is uniquely qualified to talk about what's changed for local foodies since Metromix arrived here two years ago. So we took the opportunity to grill the tattooed one about the checkered past and bright future of the Denver restaurant scene.
