Carrot and Walnut crunchies
1 ½ cups (150g) oats
½ cup (125ml) flour
1 tsp (5ml) cinnamon (optional)
1 packet (100g) walnuts, roughly chopped
½ cup (60g) dates, roughly chopped
½ cup (100g) brown sugar
1/3 cup (80g) butter
2 Tbsp (30ml) honey
1 tsp (5ml) vanilla extract
2 medium carrots, grated
Preheat the oven to around 180C.
Mix together the oats, flour, cinnamon, walnuts and dates in a large bowl.
In a saucepan stir together the sugar, butter, honey and vanilla until dissolved.
Pour the butter mixture into the dry mixture, and stir in carrots until well combined.
Spread mixture onto a baking tray, and bake for 25-30 minutes or until golden and baked through. Allow to cool slightly before slicing.
