  • It should absolutely be illegal to freeze grated cheese! One major purpose of grating cheese is to enhance the flavor of the cheese. I am not universally opposed to freezing larger chunks of cheese but I would not do it myself.

  • What he said is true, but didn't mention that freezing cheese also affects it's moisture content. That's why that 8 month old grated mozarella in your freezer tastes so unlike some delicious freshly grated mozarella sprinkled over some just-made gnocci. In a pinch, why not, but when possible, fresher is better.
