@glamah16 I bet so--bright red hands (no matter how clean) and a cursing chef don't make for good table side presentation! lol

They used to stretch mozzarella at my restaurant every once in awhile. With their hands in the hot brine. They'd dip their hands in ice water, then stretch until they couldn't stand it anymore before going back into the ice water. Lots of cooks w/red hands! (not a new trend, at least in my experience in FL). :)
