@OmnisOrtus Headcheese is not a non-sense word.

A typical head-cheese is made of pork, pork tongue and pork skins chopped into itty bitty pieces, blended with spices(mustard seeds, pickles, onions; there are many variations) and set in gelatine made from meat stock.

The meat is usually from the head of a pig or calf, hence the "head" in headcheese. Sometimes includes brains.Sometimes not made from head-meats at all.
