I don't use the cookies, I add a tablespoon of brown sugar instead. I have made this lasagne SO many times and everyone loves it!

I use this dish as my "welcome to fall" dish, but I substitute half the squash for a yam and then mash them rather than puree (I like the texture better). It's soooo good!

@AdIgnorantiam I usually either do a gingersnap cookie or even just a pinch of cinnamon - works great everytime : )
