What about using Greek-strained yogurt *AND* leave the moisture of the cucumber intact? This would have the double benefit of not wasting the nutrients of the cucumber juice, *AND* there would be a lot of extra protein (due to using Greek strained).

For the cucumber slice it up sprinkle salt over it and it will draw out all the water. You say coriander seeds, coriander powder and for the coriander leaves you call it cilantro. Every one knows it as coriander leaves even here it Australia. They would not know what cilantro is. Tomato is pronounce as to mat toe and not to mate toe.

I can't thank you both enough for this website!! One embarrassing question though- I always have trouble with the salt amount. Too little or too much tastes terrible, and I'm never sure when it tastes right. "Salt to taste" always throws me off. Would you consider supplying the exact salt amount YOU use, and then we can adjust according to taste? Thank you so much - fantastic job both of you- I have tried many of your recipes and it is wonderful food.

We truly understand your pain however, salt is such a personal taste that it is almost impossible to dictate. We try to state the appropriate amount of salt for things that you cannot taste (like for baking) but for other things, you just have to keep trying and adjusting as needed.

The raita will stay fresh for about 2-3 days. Yogurt has a long shelf life but unfortunately, cucumber does not.
