There's only one Pegasus, it's the name of a specific winged horse, not a whole 'species'. She was Bellepheron's horse in Greek mythology (not he, common misconception).

A 'capricorn' is a goat, not a horse at all.

I think the answer, though, is that horses are extremely important to human beings, have a much closer relationship with humanity than hippos and can be found in almost every country. Humans make myths out of what's important to them.

Hence a lot of mythological dogs as well.
