This no cheese omelet is prepared in Shawna's front lawn vegetable garden utilizing her fresh, sustainably grown, organic vegetables.

Herb and Fresh Organic Vegetable Omelet

Two eggs
2 Tablespoons diced red onion
1/2 Cup chopped dinosaur kale
1/4 Cup cubed bell peppers
Herbs of your choice - we used thyme and chives
Olive Oil
salt and pepper to taste

1. Saute vegetables until crispy in olive oil
2. Add herbs, heating through
3. Whip two eggs together and pour over herbs and veggies
4. Flip and cook until done

Servings: 1 to 2 -- cost is under $10

    One thing I think is totally cool is that you are shooting your video in your front yard, you've got your flowing cistern and creations in the background. That's probably your kid or your husband on the camera - you've got have at least 1 neighbor who thinks you guys are nuts, but you are ORIGINAL and doing it your own way! Incredible! Unique! Cool! I love it!
